A fresh-tasting salad for a barbecue, or serve with cold cuts for a light meal.

Ingredients

Quantity Ingredient
3 medium carrots
1 firm apple
200g see method for ingredients
1/2 lemon, finely zested
2-3 tablespoons horseradish, freshly grated
2-3 tablespoons snipped chives
sea salt
freshly ground black pepper

Method

  1. Peel and coarsely grate the carrots and place them in a serving bowl. Finely chop the apple, then fold it into the carrot.
  2. In another bowl, mix the crème fraîche with the lemon zest, horseradish and chives. Season with salt and pepper.
  3. Finally, toss the carrot and apple with the sauce to combine. Sprinkle with some more snipped chives and pepper.
