This crunchy salad with tart green mango is fabulous with barbecued chicken or beef skewers, or a superb little starter on its own.

Ingredients

Quantity Ingredient
75g cashew nuts or peanuts
1 green mango
3 small asian shallots
1/2-1 fresh red chilli
handful fresh coriander leaves, chopped

Dressing

Quantity Ingredient
1 tablespoon fish sauce
2 tablespoons fresh lime juice
2 teaspoons palm sugar, grated
or 2 teaspoons brown sugar

Method

  1. First combine the ingredients for the dressing, stir to dissolve the sugar and set aside. Chop and then lightly toast the cashews or peanuts in a dry frying pan, and set them aside as well.
  2. Peel and cut the mango into thin strips. Finely chop the shallots, and then deseed and finely slice the chilli. Place everything in a bowl, add almost all the nuts and gently stir to combine. Spoon over the dressing and top with the rest of the nuts and the chopped coriander.
