Mango salsa with lime

Ingredients

Quantity Ingredient
2 mangoes
1-2 shallots
1 fresh red chilli
1 lime, juiced and finely zested
fresh coriander leaves
pinch sea salt

Method

  1. Start by peeling and dicing the mango, and finely chopping the shallots. Deseed and chop or finely slice the chilli. Grate the lime zest, being careful not to include any white pith. Chop a bit of fresh coriander.
  2. Place everything in a bowl and gently toss to combine. Squeeze the lime juice on top, season lightly with sea salt and serve at once. This salsa is excellent with fish or meat, and is particularly good with anything barbecued.
