Tropical yoghurt swirl

This is a smooth, fresh-tasting and rather light dessert. Very pretty when served in individual glasses.

Ingredients

Quantity Ingredient
2 perfectly ripe mangoes
1/2-1 lime, juice
500g thick greek yoghurt
60g icing sugar, sifted, or to taste
2 passionfruits

Method

  1. Peel the mangoes, then cut one of them into neat pieces and set aside. In a food processor, mix the flesh from the other mango with the lime juice. Alternatively, mash the flesh by hand and use the back of a spoon to strain or press it through a sieve, then season with the lime juice.
  2. Combine the yoghurt with the sifted icing sugar, and pour about half of the yoghurt into glasses or small bowls. Spoon over some of the mango purée and then dollop a bit of yoghurt on top. Give the yoghurt a brief stir to create a ripple of mango in the yoghurt.
  3. Top with the mango pieces and then scoop out some passionfruit on top of each serving.
