Ingredients

Quantity Ingredient
1 egg white
200g almonds, blanched and peeled
100g walnuts
50g raw sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom

Method

  1. Preheat the oven to 200°C. Lightly whisk the egg white in a bowl until slightly foamy. Stir in the almonds and walnuts, then place on a baking tray lined with non-stick baking paper. Combine the sugar and spices and sprinkle the mixture over the nuts. Toast for 10-12 minutes until the almonds are nicely coloured. Tip them onto a plate and cool.
