Irresistible, chewy almond biscuits with a hint of orange. This recipe came about during a trip to Mallorca, where the almonds are simply fabulous.

Ingredients

Quantity Ingredient
200g almonds
150g sifted icing sugar, plus extra for dusting
1 tablespoon orange zest, finely grated
2 medium egg whites, (see note)
30g flaked almonds

Method

  1. Blanch and peel the almonds. Use a food processor to make the dough: grate the almonds with the shredding disc, stop the machine and switch to the steel blade. Now add half of the icing sugar, and mix until the almonds are finely ground (the sugar makes the almonds less oily). Stop the machine once more and add the rest of the icing sugar, the orange zest and the (unbeaten) egg whites. Mix briefly.
  2. Preheat the oven to 180°C. Line two baking trays with non-stick baking paper. Drop heaped teaspoonfuls of almond dough onto the prepared trays, with the help of a second teaspoon. Scatter the flaked almonds over each biscuit.
  3. Bake the biscuits in the middle of the oven for 11-12 minutes. When slightly cool, dust with extra sifted icing sugar and allow them to cool completely.

Note

  • Don’t use egg whites from large eggs: it will be too much, and the biscuits will flatten and spread during baking.
