We bake this bread nearly every day in the summer, when many of us gather around the dining table. One day we’ll add hazelnuts or walnuts to the dough, the next we might throw in both sunflower and sesame seeds instead.

Ingredients

Quantity Ingredient
25g fresh yeast
2 teaspoons salt
1 tablespoon honey
500ml lukewarm water
100ml milk
2 tablespoons olive or walnut oil
100g wholemeal or rye flour
150g hazelnuts or walnuts
or 120g sunflower seeds
600g plain flour, plus extra for sprinkling
40g sesame seeds and/or sunflower seeds, for baking

Method

  1. Crumble the yeast into a bowl, sprinkle with salt and add the honey. Pour in a little bit of the lukewarm water and stir to dissolve the yeast. Pour in the rest of the water, milk and all the other ingredients (except for the sesame or sunflower seeds). Knead until the dough comes together, then set it aside to rise for 1-1½ hours at room temperature.
  2. Preheat the oven to 260°C. Sprinkle a bit of extra flour, the sesame seeds and/or sunflower seeds on the work surface. Turn out the dough and shape it into a single loaf.
  3. Bake the bread for 10 minutes, then reduce the heat to 180°C and bake for another 30 minutes. Let the bread cool on a wire rack.
