In all their simplicity, sugar-stirred raspberries are a delicacy on top of ice cream or Greek yoghurt flavoured with vanilla. Use them frozen for baking, in smoothies and more.

Method

  1. Carefully pick over the raspberries and mash them by hand, ideally with a potato masher. Sweeten with a bit of caster sugar and enjoy the raspberries pretty much immediately. You can also freeze them in small freeze-proof containers.

Note

  • Mashed raspberries can also be frozen unsweetened, but won’t maintain the exquisite berry flavour as well.
