Warm vanilla raspberries

We often had this comforting dessert for Sunday dinner at Grandma’s house. Serve the warm raspberries with vanilla ice cream and a spoonful of lightly whipped cream.

Ingredients

Method

  1. Place 500 g fresh or lightly sugared frozen raspberries and 2 tablespoons water in a pan. Slice half a vanilla pod lengthwise, scrape out the seeds and put the seeds and pod in the saucepan. Bring to a quick boil, and stir until the raspberries are slightly mashed. Remove the vanilla pod and add icing sugar to taste.
  2. Serve the raspberries warm as above, or alongside the poached saffron pears.
