This is a very versatile tomato sauce. Sometimes we top it with crumbled feta cheese and lots of basil or flat-leaf parsley, and serve it with pasta or couscous. It is also an excellent tomato base when making pizza or lasagne.

Ingredients

Quantity Ingredient
2-3 garlic cloves
2 tablespoons olive oil
800g tinned sieved tomatoes
or 1 tin passata and 1 tin chopped tomatoes
1 teaspoon sea salt flakes
some freshly ground black pepper
a small pinch caster sugar
1 bay leaf
1-2 tablespoons tomato paste, (optional)
10-15 fresh basil leaves

Method

  1. Peel and finely chop the garlic. Heat the olive oil in a saucepan, then add the garlic and sauté for about 1 minute, without browning. Pour in the tinned tomatoes and season with sea salt, black pepper and a pinch of sugar. Add the bay leaf, the tomato paste if using, and then fold in some shredded basil.
  2. Bring to the boil and then slowly let the sauce simmer, uncovered, for about 15 minutes, stirring occasionally. Discard the bay leaf. Taste and then season with salt, pepper and perhaps a touch more sugar if needed.
