Vanilla panna cotta is a delightful dessert that is easy to make for a crowd. Serve it with fresh summer berries and perhaps a bit of raspberry coulis.

Ingredients

Quantity Ingredient
600ml pure cream
400ml full-fat milk
5 tablespoons caster sugar
1/2 vanilla pod, split lengthwise
4 gelatine leaves

To serve

400g fresh berries, lightly sugared
Raspberry coulis, (optional)

Method

  1. First bring the cream to the boil with the milk, sugar and vanilla pod. Cover and simmer slowly for 15 minutes. Meanwhile, soak the gelatine leaves in cold water until soft.
  2. Remove the gelatine leaves, add them to the warm cream mixture and melt while stirring. Remove the vanilla pod, scrape out the seeds and return them to the milk in the pan. Stir well to combine. Strain the mixture straight into a jug. Leave to cool until just lukewarm, stirring occasionally.
  3. Pour the mixture into 10-12 small ramekins. Allow to cool and then refrigerate until set.
  4. Just before serving, quickly dip the bottom of the ramekins in hot water and unmould the panna cottas onto individual plates. Garnish with lightly sugared berries and serve with some raspberry coulis, if desired.
