Simple panna cotta in a glass

This is a slightly simpler panna cotta that we like to serve in small glasses, topped with lime-marinated strawberries and blueberries.

Ingredients

Quantity Ingredient
600ml pouring cream
200ml full-fat milk
3 tablespoons caster sugar
4 gelatine leaves
1-2 teaspoons pure vanilla extract or paste

To serve

400g strawberries and blueberries
2 tablespoons caster sugar
1/2-1 lime, finely zested

Method

  1. Put the cream, milk and sugar into a pan. Soak the gelatine leaves in cold water.
  2. Slowly simmer the creamy milk, uncovered, for 10 minutes. Remove the gelatine leaves from the water, and let them melt in the warm creamy milk. Stir in the vanilla, remove from the heat and strain into a jug.
  3. Allow the mixture to cool for 15 minutes. Stir gently and then pour the mixture into 8-10 small glasses. Place them on a tray in the fridge to set.
  4. Hull and slice the strawberries, and put them in a bowl with the blueberries, a little sugar and the grated lime zest. Let the flavours mingle for about 30 minutes before topping the panna cotta with the berries.
