Not only does beetroot add vibrancy to your morning Bircher, it also increases levels of antioxidant enzymes in the body. I love its earthy taste, which works well with autumnal flavours such as apple and walnut.

1 cooked beetroot
1 tablespoon apple juice
125g oats
100ml coconut yoghurt
100ml water
1/2 apple, peeled and grated

Topping

toasted walnuts
chopped apple

Method

  1. Blitz the beetroot with the apple juice.
  2. Place the rest of the ingredients for the Bircher in a mixing bowl and stir to combine.
  3. Transfer the beetroot mixture to the bowl and stir.
  4. Cover and place in the fridge overnight.
  5. The next morning, divide the mixture between 2 bowls. Serve with the suggested toppings.
