I love the freshness and creaminess of oats left to soak overnight with a little bit of citrus and fruit. It is a great start to the day, whatever you have going on later. Blackberries are, for me, a very nostalgic taste – I used to pick them by the basketful as a child, in the bushes behind the house I grew up in, adjacent to the underground tracks. I love that you never know how sharp or sweet the taste will be. They make a classic combination with the fresh taste of apples in this compote, with just a little sweetness added. I return to this Bircher time and time again.

100g oats
1/4 teaspoon ground cinnamon
1 1/2 red apples, peeled and grated
1/2 lemon, zested
250ml milk
1/2 tablespoon maple syrup or honey

Blackberry compote

Quantity Ingredient
175g blackberries
2 tablespoons water
1/2 tablespoon maple syrup or honey

Topping

Quantity Ingredient
slices red apple

Method

  1. Put all the ingredients for the Bircher in a bowl and mix thoroughly.
  2. Cover and place in the fridge overnight.
  3. To make the blackberry compote, put all the ingredients in a pan over a medium heat and cook until the blackberries are soft but have not lost their shape.
  4. Serve the compote on top of the Bircher, with fresh slices of apple, if you wish.
