I know my body is thanking me when I incorporate vegetables into my breakfast bowl. Grated carrot is a great one to sneak in there, adding flavour, nutrients, texture and colour. When preparing this recipe before bed, I know I have something to look forward to in the morning.

100ml milk
100ml natural yoghurt
60ml water
1 carrot, peeled and grated
1/2 apple, peeled and grated
1 teaspoon maple syrup
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Topping

Quantity Ingredient
dried dates
walnuts
maple syrup

Method

  1. Place all the ingredients for the Bircher in a mixing bowl and stir to combine.
  2. Cover and place in the fridge overnight.
  3. The next morning, divide the mixture between 2 bowls. Serve with the suggested toppings.
