500g peanuts
1 tablespoon coconut oil
pinch salt

Method

  1. Preheat the oven to 180°C.
  2. Place the peanuts on a baking tray and toast for 15 minutes, shaking the tray after 5 minutes to ensure they toast evenly, then remove and leave to cool.
  3. Melt the coconut oil in a pan over a medium heat.
  4. Blend the toasted peanuts in a food processor or blender for up to 5 minutes, adding the coconut oil bit by bit, until you reach the desired consistency.
  5. Store in an airtight, sterilised jar. It will keep for up to 6 months.
