Bananas are a breakfast staple for me and I probably include them in my breakfast on most days. We have tried several variants of a banana granola in the Spoon Cereals kitchen over the years but this recipe has come out the winner, as bananas and walnuts are such a great combination. Simplicity, great taste and solid nutritional benefits mean that this granola epitomises what our cereals are all about.

175g oats
75g walnut halves
1 teaspoon ground cinnamon
60g dried banana chips

Wet ingredients

2 bananas, peeled
125ml maple syrup
100ml rapeseed oil

Method

  1. Preheat the oven to 200°C.
  2. Combine the dry ingredients (except the dried banana chips) in a large mixing bowl.
  3. Mash the bananas until soft and smooth. Put all of the wet ingredients into a separate bowl and mix thoroughly.
  4. Add the wet ingredients to the dry and mix to ensure everything is well combined.
  5. Spoon the mixture onto a baking tray lined with baking parchment, spreading into a thin, even layer. (Use 2 trays if needed.)
  6. Bake on the middle shelf in the oven, turning the ingredients every 15 minutes or so and spreading them evenly across the tray, to prevent the granola from burning at the edges. The granola is ready when lightly browned (normally 30–35 minutes) and should crisp up as it cools. If the granola is not yet crisp (the bananas do add a bit of extra moisture) you can turn off the oven and leave it in there while it cools down.
  7. Remove the granola from the oven. Break up the dry banana chips to the size you want and then add them to the granola.
