Ingredients

knob butter
2 eggs
bunch fresh herbs, finely chopped
small handful baby spinach, finely chopped
1/2 ripe avocado
salt
freshly ground black pepper

Topping

Quantity Ingredient
feta cheese, crumbled
chopped green chilli
olive oil
1/2 lime

Method

  1. In a small pan, melt the butter. Scramble the eggs, throwing in the chopped soft herbs and baby spinach halfway through cooking.
  2. Peel, stone and chop the avocado, then place this in the bottom of the bowl. Season to taste.
  3. Spoon the scrambled eggs on top and serve with a little crumbled feta, chopped green chilli, a drizzle of olive oil, and a squeeze of lime.
