Chestnut tagliatelle with a mushroom sauce

What a wonderful combination of two items from the woods, both of which are in season in the latter part of the year. You can buy the chestnut flour in good delicatessens. Remember that it will only keep a maximum of six months, so make sure it is within date.

Pasta

300g fresh chestnut flour
100g fine semolina
3 medium-size eggs

Sauce

Quantity Ingredient
30g dried porcini, rehydrated
2 garlic cloves, peeled and finely chopped
6 tablespoons olive oil
200g button mushrooms, finely sliced
1/2 teaspoon chopped fresh hot red chilli, (optional)
salt and pepper, to taste
2 tablespoons finely chopped fresh flat-leaf parsley

60g parmesan, freshly grated

Method

  1. Soak the dried porcini in hot water for 20 minutes. Drain and finely chop. Set aside.
  2. Make the pasta dough following the method for Fresh egg pasta and roll out and cut into tagliatelle. You can also use dried chestnut tagliatelle if you can find it (but this will be difficult).
  3. Start the sauce by frying the garlic in the olive oil in a large saucepan. Add the sliced mushrooms immediately and cook for about 6 minutes, then add the porcini, chilli if you like, and a few tbsp of water. Season with salt and pepper to taste, then add the parsley.
  4. Cook the tagliatelle in plenty of boiling salted water for about 3 minutes or until al dente. Drain, mix with the sauce, and serve, sprinkled with the Parmesan.
