I like this combination of tomato and mozzarella without the usual basil, which I prefer to eat just with tomatoes. The rocket, particularly the wild variety, revives the rather bland tomato and mozzarella with its sharp taste.

Ingredients

Quantity Ingredient
100g rocket, cleaned and washed
200g tomatoes, quartered
150g buffalo mozzarella, cut into strips

Dressing

Quantity Ingredient
4 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
1/2 teaspoon caster sugar
salt
pepper

Method

  1. To make the dressing, combine the oil, vinegar, sugar, salt and pepper in a small bowl and mix well.
  2. Mix the rocket, tomatoes and mozzarella in a bowl and toss together with the dressing. Serve immediately (as the tomato becomes pulpy if left for too long).
