Baked potatoes with onion and garlic

This recipe is self-explanatory, extremely simple to make and delicious. It makes a wonderful side dish for almost anything, and is particularly good with roast meat or poached fish.

Ingredients

Quantity Ingredient
1.5kg potatoes, peeled and cut into thick slices
500g onions, peeled and sliced
30 garlic cloves, unpeeled
100ml olive oil
salt
1 sprig rosemary
pepper

Method

  1. Preheat the oven to 220ºC.
  2. Put the potatoes, onion and garlic in a baking tray, sprinkle with the olive oil, some salt and plenty of pepper and mix with your hands. Add the rosemary.
  3. Bake in the preheated oven for 40–50 minutes. Halfway through, give it a mix to allow the bottom layer to come to the top and become brown.
  4. The garlic in the skin, squeezed with your fingers into your mouth, is creamy and sweet.

Leftovers

  • Minced up, together with some mushrooms or beans, the potatoes and onions would make a good base for a soup. You could also chop any leftovers up and make into an omelette or frittata.
