Ingredients

Quantity Ingredient
2 oranges, juiced
75ml water
3 tablespoons honey
30 large, soft dried figs
30 half walnuts or whole blanched almonds
30 small pieces tangerine, orange or citron zest

Method

  1. Put the orange juice in a pan and dilute with the water. Add the honey and bring to the boil. Add the figs to the pan and cook gently for about 15 minutes until they begin to swell. Drain, reserving any liquor, and spread the figs out on a tray. Leave to dry for a day.
  2. Preheat the oven to 200ºC. Make an incision in each fig, and insert a nut and a piece of tangerine, orange or citron zest in each slit. Close tightly and bake for about 25 minutes, until caramelised and brown.
  3. At the end, I drizzle the reserved orange and honey syrup over ... delicious.

Variation

  • This great classic dessert is made with very simple ingredients indeed. For it to work, however, the figs have to be impeccably ripe and of good quality.
