Fried marinated courgettes

Ingredients

Quantity Ingredient
olive oil, for frying
6 courgettes, trimmed and cut into 7–8cm sticks, excess seeds removed
4 tablespoons extra virgin olive oil
bunch mint leaves, chopped
2 garlic cloves, cut into quarters
1 tablespoon white wine vinegar
salt

Method

  1. Heat a little of the plain olive oil in a pan and fry the courgettes in batches so that they are separate rather than crowded together. Fry until brown, then drain on kitchen paper.
  2. Put the courgette batons in a dish, and add the extra virgin olive oil, mint, garlic, vinegar and salt, and leave for the flavours to combine before eating.
