Grilled and baked radicchio

Ingredients

Quantity Ingredient
4 whole radicchio, with a nice pointed root
8 tablespoons extra virgin olive oil
salt
pepper
8 slices speck
125g fontina cheese, very thinly cut

Method

  1. Preheat the grill to medium and the oven to 190°C.
  2. Remove the old outer leaves from the radicchio, and trim the stems. Cut into two equal parts lengthways. (The radicchio should be at least 20cm long, including the root.) Brush the halves with olive oil, salt and pepper, put under the preheated grill (make sure it’s not too hot), and cook gently for 15 minutes. Brush with more oil and check that the leaves are not burning.
  3. Remove from the grill, lay a slice of speck and fontina on each half and sprinkle on some pepper. Put in the preheated oven for 5–8 minutes or until the cheese has melted. Serve as an antipasto.
