Escarole or batavia – scarola in Italian – is a leafy plant of the chicory family, which is used fresh in salads and cooked as a filling. In the south of Italy they usually call this dish pizza di scarola, but I am putting the escarole filling individually in pastry in the shape of a calzone, which is a folded pizza!

Ingredients

500g shortcrust pastry

Filling

600g batavia or escarole
extra virgin olive oil
2 garlic cloves, peeled and sliced
2 medium tomatoes, finely chopped
20g salted capers, desalted
20g soft raisins
salt
freshly ground black pepper

Method

  1. Preheat the oven to 180°C.
  2. Wash and dry the green leaves, and chop them coarsely.
  3. In a frying pan, heat 4 tablespoons of olive oil. Add the garlic, stir, then immediately add the tomatoes, the chopped leaves, capers, raisins and some salt and pepper to taste. Put a lid on and braise the leaves until soft, about 15 minutes. Let the mixture cool, then squeeze out the majority of the liquid, using your hands.
  4. On a lightly floured surface, roll out the pastry to a 5mm thickness. Cut into four circles of equal diameter, roughly 25cm. Place a quarter of the vegetable mixture in the middle of each circle. Pull one side of the circle over the filling, then fold over the edges to enclose, or very firmly fork the two layers together. You will have a half-moon calzone.
  5. Place them on a baking sheet and brush with a little olive oil. Bake in the preheated oven for 20–30 minutes. Serve hot or cold.
