This typical Neapolitan dish is made around Christmas time, and a bowlful is usually positioned strategically, where there is most traffic, prior to a mealtime. The idea is to pick up a piece of pickled vegetable in your fingers as you pass, in order to stimulate appetite. I have been known to pass so often, that I am full before I even sit down…

Ingredients

Quantity Ingredient
1 cauliflower, divided into chunks or small florets
200g carrots, peeled and cut into little chunks
2 large red or yellow peppers, deseeded and cut into strips
100g small onions, peeled
1 litre white wine vinegar
30g table salt
100g pitted black olives
extra virgin olive oil

Method

  1. Prepare the vegetables first.
  2. Pour the vinegar into a large saucepan and add 2 litres of water and the salt. When boiling, add all the vegetables and the olives, and cook until al dente (with a little bite), or softer if you prefer.
  3. Drain off the liquid, then season and lightly coat the cooked vegetables with some extra virgin olive oil. Put into a ceramic bowl, and leave in a spot where they will be most appreciated.
