This is a delightful salad from the Veneto region, where in season you can find the radicchi of Treviso, Chioggia and Castelfranco, three quite different-looking vegetables. I am using the Treviso radicchio in this recipe because it is the most commonly available. Its salad companion is the long-leaved Belgian chicory. One type of Treviso is also available much later in the year, up to December, which makes it very special in terms of flavour and availability. Tardivo means ‘the late one’, and the tardivo di Treviso, with its stronger bitter accents, can be grilled, steamed, roasted, used in a salad… they even make a grappa out of it!

Ingredients

Quantity Ingredient
1 large head of radicchio di treviso
1 medium head of belgian chicory
70g lean speck, cut into small julienne

Vinaigrette

Quantity Ingredient
5 tablespoons extra virgin olive oil
3 tablespoons balsamic vinegar
1/2 teaspoon caster sugar
salt
freshly ground black pepper

Method

  1. Trim and clean the leaves. Cut both types of leaf into 5cm chunks. Put these chunks into a large bowl, and mix with the speck.
  2. Mix the vinaigrette ingredients together in a jar or bowl, and dress the salad. Mix well, and serve as a starter or a side salad. It is especially delicious served with a good dark bread from the area.
