Wax beans with butter and breadcrumbs

For this simple dish, I use wax beans, which cook in the same way and look similar to green beans, but they are creamy white in colour. They are wonderful used in salads, but this particular dish can be used as a side dish or as a starter.

Ingredients

Quantity Ingredient
600g wax beans, topped and tailed
70g dried white breadcrumbs
30g unsalted butter
salt
freshly ground black pepper

Method

  1. Boil the wax beans in salted water until soft, about 10–12 minutes.
  2. Meanwhile, prepare the toasted breadcrumbs. Heat the butter in a small pan until foaming, then add the breadcrumbs and salt and pepper to taste. Stir-fry until the breadcrumbs are golden.
  3. Drain the beans and place on serving plates. Top with a quarter of the breadcrumbs per portion.
