Carrot, celeriac and artichoke salad

It is difficult to translate capricciosa into English. It suggests whimsicality or capriciousness, but in culinary terms it refers to a mixture of things (think pizza). Here it means a concoction of three raw vegetables, which, along with the help of mayonnaise, become a delight to put on bread, on pastry, in sandwiches, etc. A little portion of this capricciosa is usually offered as part of an antipasto in a similar way to Russian salad. It is also similar to the French céleri rémoulade, which is served as a starter.

Ingredients

Quantity Ingredient
200g celeriac, peeled and cut into matchsticks
300g carrots, peeled and cut into matchsticks
250g pickled artichokes in oil, cut into matchsticks
150g good mayonnaise
1/2 large lemon, juiced
salt

Method

  1. Once you have cut the vegetables into similar-sized pieces, put them into a large serving bowl. Mix in the mayonnaise, lemon juice and salt to taste.
  2. This can be kept in the refrigerator for a few days.
