Roast duck with fermented tofu

Known as chao do in Vietnamese, this gorgeous dish is very simple to prepare. You will find red fermented tofu in your local Asian supermarket, usually in a glass jar. It adds a unique flavour and a deep, burnished glaze to the duck as well as seasoning the meat. The mixture here can also be brushed over roasting chicken or pork belly, in the same way. Serve this with simple steamed rice garnished with pickled chillies.

Ingredients

1 x 2.2kg duck
5 pieces red fermented tofu
2 1/2 tablespoons tofu soaking liquid
2 1/2 tablespoons honey
1 1/2 teaspoons five-spice powder
2 cm piece fresh ginger, very finely chopped
1 tablespoon sesame oil

Method

  1. Using paper towel, pat the duck dry all over.
  2. In a large bowl using a fork, mash the fermented tofu well, then combine with the remaining ingredients and mix until smooth.
  3. Add the duck to the bowl and, using your hands, rub the mixture all over the duck to coat, pushing some of the mixture between the skin and flesh where possible, taking care not to tear the skin. Cover the bowl with plastic wrap and refrigerate for 8 hours or overnight.
  4. Bring the duck to room temperature and preheat the oven to 180°C.
  5. Place the duck on a wire rack inside a roasting tin, breast side down, reserving any marinade and juices left in the bowl. Season well with salt and freshly ground black pepper. Roast for 45 minutes, brushing the duck occasionally with the reserved marinade. Turn the duck over and cook for a further 45 minutes, brushing it occasionally, or until cooked – the juices should still be a little pink when it is pierced between the thigh and the body. Remove the duck from the oven, cover loosely with foil and rest for 20 minutes.
  6. To serve, use a cleaver or large, heavy knife to cut the duck into pieces, through the bone. Place on a platter and serve.
