This simple Thai-style dressing is wonderful poured over a steamed, whole snapper. You could also spoon this over steamed mussels, a platter of cooked, peeled prawns, a simple seafood and watercress salad, or natural oysters in their half-shells.

Ingredients

Quantity Ingredient
8 coriander roots, scrubbed
3 garlic cloves, chopped
1 large red chilli, chopped
4-8 red bird’s eye chillies, thinly sliced
60ml lime juice
80ml fish sauce
1 tablespoon shaved palm sugar

Method

  1. Combine the coriander roots, garlic and chilli in a small food processor and process until a paste forms. Alternatively, use a mortar and pestle. Transfer the mixture to a bowl, add the remaining ingredients and stir until the sugar has dissolved. Season with freshly ground black pepper. This lime dressing is best consumed on the day it is made.
