Ingredients

Quantity Ingredient
500ml clear rice vinegar
8 heads garlic
220g sugar
2 teaspoons salt

Method

  1. Put the vinegar and 250 ml water in a saucepan and bring to the boil. Add the whole garlic heads and cook for 2 minutes, then remove the pan from the heat. Add the sugar and salt, stir to combine, then leave to cool to room temperature. Transfer the garlic heads and liquid to a clean jar, seal and refrigerate for 3–4 days before using.
