Mandarin pancakes

You’ve no doubt encountered these if you’ve ever ordered Peking duck or mu shu pork in a Chinese restaurant. These thin, versatile pancakes are quite simple to make, requiring only flour, water and oil. We particularly love peeling them apart after they’re cooked and smelling the unmistakable aroma of sesame oil. These freeze well too, if you want to make extra to have on hand.

Ingredients

300g plain flour
1 tablespoon peanut oil
sesame oil, for brushing

Method

  1. Sift the flour into a mixing bowl, add 185 ml boiling water and the peanut oil and mix well with a wooden spoon or chopsticks. Turn the dough out onto a lightly floured surface and knead for about 8 minutes, or until the dough is smooth (take care, as the dough will be hot). Cover with a damp tea towel and leave to rest for 30 minutes.
  2. Roll the dough into a log about 30 cm long. Cut the log into 20 even pieces, then roll each piece into a ball. Use your hand to press down on each dough ball, flattening it out into a 7 cm circle, about 5 mm thick. Lightly brush one side of each circle with sesame oil, then sandwich two circles together with the sesame oil sides facing each other. Using a rolling pin, roll each pair of circles into 14 cm pancakes, then cover with a damp tea towel.
  3. Heat a large cast-iron or heavy-based frying pan over a medium heat. Add the pancakes in batches and cook each side for 1–2 minutes, or until they just start to bubble slightly and brown spots form on the cooked surface. Remove from the pan and pull the two pancakes apart, then stack with the cooked sides facing down. Cover with foil and keep warm in a low oven while you cook the remaining pancakes.
