Ingredients

Quantity Ingredient
4 lebanese cucumbers, peeled
2 teaspoons salt
3 teaspoons caster sugar
2 1/2 tablespoons clear rice vinegar
2 1/2 tablespoons peanut oil
4 large garlic cloves, finely chopped

Method

  1. Cut the cucumbers in half lengthwise, then cut them crosswise into 2–3 cm-thick slices. Put the cucumbers in a colander and toss with the salt, then place the colander in the sink for 1 hour for the liquid to drain. Place the cucumbers on a tea towel and pat dry.
  2. In a large bowl, combine the sugar, vinegar and oil, stirring until the sugar has dissolved. Add the cucumbers and toss well. Pile the mixture onto a serving platter and scatter over the garlic.
