Marinated spicy carrot

Ingredients

Quantity Ingredient
400g carrots, finely shredded
2 garlic cloves, very finely sliced
2-3 teaspoons Strained chilli oil, to taste
3 teaspoons sesame oil
1 tablespoon caster sugar
60ml red rice vinegar
3 spring onions, finely shredded
1 large handful coriander leaves, chopped
sea salt

Method

  1. Bring a saucepan of salted water to the boil. Add the carrots and cook for about 2 minutes, or until very slightly softened. Transfer to a colander and rinse under cold running water to cool. Drain well and place in a tea towel, wrap it up and gently wring out as much water as possible.
  2. Put the garlic, chilli oil, sesame oil, sugar and vinegar in a large bowl and stir until the sugar has dissolved. Add the carrots, toss to combine, then cover the bowl with plastic wrap and leave for 20 minutes for the flavours to develop. Add the spring onions and coriander and toss to combine. Season to taste with sea salt, then transfer to a platter and serve.
