Ingredients

Quantity Ingredient
1/2 small daikon, peeled
1 small bunch red radishes, washed and trimmed
1 bunch coriander, sprigs picked

Dressing

Quantity Ingredient
1 tablespoon caster sugar
1 tablespoon black rice vinegar
1 tablespoon sichuan chilli bean paste
2 garlic cloves, finely chopped
2 tablespoons Strained chilli oil
2 tablespoons peanut oil

Method

  1. To make the dressing, put all the ingredients in a food processor and process until the mixture is smooth.
  2. Cut the daikon into 5 cm matchsticks and very finely slice the red radishes into rounds. Pat the radishes dry using paper towel, then combine the radishes and daikon in a bowl with three-quarters of the coriander sprigs. Toss to combine well, then add the dressing and toss to coat. Transfer the salad to a platter, scatter over the remaining coriander and serve immediately.
