Ingredients

Quantity Ingredient
1/2 large red capsicum, seeded and cut into long shreds
1 carrot, cut into long shreds
200g pressed tofu shreds
2 spring onions, finely shredded
1 handful coriander sprigs
2 tablespoons Toasted sesame seeds

Dressing

Quantity Ingredient
1 garlic clove, crushed
large pinch caster sugar
1 1/2 tablespoons clear rice vinegar
1 1/2 tablespoons light soy sauce
1 1/2 tablespoons sesame oil

Method

  1. To make the dressing, put all the ingredients in a bowl and whisk to combine well.
  2. Bring a saucepan of salted water to the boil, then add the capsicum, carrot and tofu shreds and cook for 1 minute. Drain well in a colander and leave to cool. Place the cooled ingredients in a large bowl and combine with the spring onions, coriander and sesame seeds. Add the dressing, toss to combine and serve.
