Ingredients

Quantity Ingredient
500g chinese cabbage, tough outer leaves and hard core removed
1 teaspoon salt
80ml clear rice vinegar
2 tablespoons caster sugar
2 small red chillies, finely sliced
2 teaspoons sesame oil

Method

  1. Using a large, sharp knife, finely slice the cabbage. Place the cabbage in a large bowl, add the salt, vinegar and sugar and toss to combine well. Cover the bowl and set aside for 1–2 hours, or until the cabbage has softened slightly. Add the chillies and sesame oil, toss to combine and serve.
