Ingredients

Quantity Ingredient
30g dried wood ear fungus
1-2 small red chillies, finely sliced
2 spring onions, finely shredded
1 bunch coriander, sprigs picked, (optional)

Dressing

Quantity Ingredient
2 1/2 tablespoons light soy sauce
2 tablespoons black rice vinegar
1 teaspoon caster sugar
3 teaspoons sesame oil
2 garlic cloves, crushed

Method

  1. Put the wood ear fungus in a heatproof bowl, cover with boiling water and soak for 30–40 minutes, or until softened, then drain. Meanwhile, to make the dressing, put all the ingredients in a bowl and whisk to combine well.
  2. Bring a large saucepan of water to the boil, add the wood ears and cook for 3–4 minutes, then drain well and cool. Using your hands, tear each wood ear into two or three pieces, discarding any hard pieces. Place in a bowl with the chillies, spring onions and coriander sprigs, if using. Add the dressing and gently toss to combine well, then transfer to a serving bowl.
