Spicy buckwheat noodles

Ingredients

Quantity Ingredient
400g dried soba noodles
2 tablespoons vegetable oil
80ml soy sauce
80ml black rice vinegar
1-2 tablespoons Strained chilli oil, to taste
2 teaspoons sugar
2 teaspoons garlic, finely chopped
3 spring onions, finely sliced on the diagonal
1 large chilli, finely sliced
50g Toasted sesame seeds

Method

  1. Bring 2 litres water to the boil in a saucepan, add the noodles and cook for 3–5 minutes, or until softened. Drain and rinse under cold running water, then drain again and place in a bowl. Add the oil, soy sauce, vinegar, chilli oil, sugar, garlic and spring onions. Mix well, then turn out onto a platter and scatter with the chilli and sesame seeds.
