Chicken with potatoes and sesame

This recipe is based on one from the fabulous book, Chinese Home-Style Cooking, one of the few published in English on the subject, and it indicates the recipe originates in Suzhou. We are drawn to the rustic combo of potato and chicken cooked with all our favourite Chinese flavours: sesame, soy sauce and rice wine.

Ingredients

4 chicken leg quarters
60ml light soy sauce
60ml shaoxing rice wine
340ml Chicken stock
1 litre vegetable oil
cornflour, for dusting
450g small desiree or other all-purpose potatoes, peeled
1 tablespoon Toasted sesame seeds
4 spring onions, cut into 4 cm lengths
2 teaspoons sesame oil

Method

  1. Using a cleaver, chop each chicken leg into four or five pieces widthwise, trimming the bone off at the thin end of the leg. Combine the soy sauce, rice wine and stock in a bowl and set aside.
  2. Pour the vegetable oil into a wok and heat to 180°C, or until a cube of bread dropped into the oil turns deep golden in 15 seconds. Meanwhile, put the cornflour in a bowl, add the chicken pieces in batches, and turn to coat, shaking off the excess. Fry the chicken in batches for 4–5 minutes, or until light golden. Remove and drain on paper towel. Reserve the oil in the wok.
  3. Cut the potatoes in half or, if slightly large, into three pieces. Add the potatoes to the hot oil in the wok and cook for 5 minutes, or until golden. Remove and drain on paper towel. Pour the oil into a heatproof bowl to cool, then later discard it.
  4. Add the soy sauce mixture to the wok and bring to a simmer over a medium heat, then add the chicken and potatoes, cover the wok and cook for 8–10 minutes, or until the chicken and potatoes are tender and the sauce has thickened. Sprinkle the sesame seeds and spring onions over the top, drizzle with the sesame oil, then cover and cook for another minute. Transfer to a platter and serve.
