Ingredients

Quantity Ingredient
2 tablespoons young ginger, very finely chopped
1 teaspoon sesame oil
3 teaspoons peanut oil
12 extra large fresh oysters, on the half shell

Dressing

Quantity Ingredient
1 1/2 teaspoons caster sugar
2 garlic cloves, crushed
3 teaspoons clear rice vinegar
1 tablespoon clear rice wine
2 1/2 tablespoons light soy sauce
2 1/2 tablespoons Chicken stock

Method

  1. To make the dressing, combine all the ingredients in a bowl and whisk until the sugar has dissolved.
  2. Combine the ginger, sesame oil and peanut oil in a bowl and mix well. Put the oysters in a large steamer over a wok or saucepan of boiling water. Spoon a little of the ginger mixture over each oyster, then cover and steam for 2 minutes, or until just warmed in the middle — be careful you don’t overcook the oysters. Transfer the oysters to a platter, taking care so the juices in the shells don’t spill, then spoon some dressing over each oyster and serve immediately.
