The Chinese propensity for sugar might surprise some, but sugar cultivating and refining came to China early — from India and in the seventh century. Wherever we go, it seems, there’s some variety or other of a peanut or sesame candy being pulled or pounded on the street. In city parks, clever vendors fashion molten sugar into butterflies, dragons or puppies, then set them on sticks to sell to excited children.

Ingredients

100g Toasted sesame seeds
320g raw, skinned peanuts, roasted, (see note)
515g caster sugar
2 1/2 tablespoons clear rice vinegar

Method

  1. Grease the base and sides of a 26 x 14 cm ceramic or glass baking dish, then line the base with baking paper. Sprinkle half of the sesame seeds over the base of the dish, then scatter all the peanuts evenly over the sesame seeds.
  2. Combine the sugar, vinegar and 60 ml water in a saucepan and bring to a simmer over a low heat, then increase the heat to medium and bring to the boil; cook for 8–10 minutes, or until the mixture turns deep golden. Pour the caramel evenly over the sesame seeds and peanuts in the dish, taking care as the caramel is extremely hot. Cool for 5 minutes, then sprinkle the remaining sesame seeds over the top, gently pressing them into the caramel. Leave the peanut brittle to cool for 30–40 minutes, or until firm but not completely hard. Turn out onto a chopping board then, using a large oiled knife, cut the brittle into pieces and leave until cool and hard. Transfer to an airtight container. The peanut brittle can be stored in the container in a cool, dark place for up to 1 month.

Note:

  • Preheat the oven to 180°C. Put the peanuts on a baking tray and roast for 15 minutes, or until golden, then remove the peanuts from the tray and cool.
