Beans in cumin and salt batter

Ingredients

Quantity Ingredient
225g plain flour
1 egg
1 tablespoon sugar
1 teaspoon sea salt, plus extra to serve
2 tablespoons cumin seeds
500g green beans, trimmed
1 litre vegetable oil

Method

  1. In a large bowl, whisk together the flour, egg and 375 ml water to form a smooth batter that has the consistency of thick pouring cream. Add a little more water if necessary. Stir in the sugar, sea salt and cumin seeds. Add the green beans and stir to coat well.
  2. Preheat the oven to 150°C. Heat the oil in a wok over a high heat until just smoking. Taking care, add the beans to the hot oil in batches and cook for 5–7 minutes, or until the batter is golden and crisp and the beans are tender. Drain on paper towel and place in the warm oven until all the beans are cooked. Transfer to a platter and season with sea salt before serving.
