Brussels sprouts and dried shrimp stir-fry

This dish couldn’t be more simple — but like all simple things it does rely on a few crucial details. The first lies in cutting the brussels sprouts very, very finely, and the second is in using the variety of dried shrimp so tiny they are practically krill (the Chinese call these tiny dried shrimp ‘shrimp skin’).

Ingredients

Quantity Ingredient
80ml vegetable oil
20g very small dried shrimp
600g brussels sprouts, very finely sliced
3 garlic cloves, finely chopped
2 1/2 tablespoons light soy sauce
3 spring onions, finely sliced

Method

  1. Heat the oil in a wok over a medium–high heat, then add the shrimp and stir-fry for 2–3 minutes, or until light golden and fragrant. Using a slotted spoon, remove the shrimp to a bowl.
  2. Add the brussels sprouts and garlic to the wok and stir-fry over a medium–high heat for 4–5 minutes, or until the sprouts are just tender. Return the shrimp to the wok, then add the soy sauce and spring onions and stir to combine well. Cook for another minute to heat through, then transfer to a large bowl and serve.
