We’ve never eaten anything as spicy as Sichuanese food. This large, populous province in the southwest of China has a damp and humid climate and the logic goes that chilli combats the ill effects of this ... we just think the Sichuanese are addicted to capsaicin. Beware, this is a spicy dish, so tone down the chilli if you prefer.
