Ingredients

Quantity Ingredient
2 bunches red radishes
1 teaspoon salt
2 tablespoons clear rice vinegar
2 teaspoons sugar
2 tablespoons light soy sauce
2 tablespoons peanut oil
2 garlic cloves, crushed

Method

  1. Trim the radishes and wash them. Using the side of a heavy knife or cleaver, press hard on each radish to crack it open. Don’t press too hard — you only want the radish to just crack open. Place the radishes in a bowl, sprinkle over the salt and set aside for 40 minutes to soften slightly.
  2. Put the remaining ingredients in a large bowl and whisk to combine well. Add the radishes and toss to coat, then transfer to a serving bowl or plate.
