Steaming renders eggplants super soft. Don’t skip the salting part as this process really does help achieve a great texture (despite what you might read, salting eggplant has little to do with expelling bitterness; these days, eggplants aren’t especially ‘bitter’). This is one of those easy recipes where you can make the sauce well ahead of time and then simply pour it over the eggplants once they are tender.
