Tofu with sesame dressing

Ingredients

Quantity Ingredient
500g silken tofu, cut into 1 cm squares
1 large handful coriander leaves, roughly chopped
Strained chilli oil, to serve
2 tablespoons Toasted sesame seeds

Sesame dressing

Quantity Ingredient
60ml chinese sesame paste, plus 1½ tablespoons oil from the jar
1 1/2 tablespoons clear rice vinegar
2 garlic cloves, very finely chopped
sea salt
ground white pepper

Method

  1. To make the sesame dressing, combine the sesame paste, oil and 60 ml warm water in a small bowl and whisk until smooth. Stir in the vinegar and garlic and season to taste with sea salt and white pepper.
  2. Place the tofu in a large heatproof bowl, then carefully pour boiling water over the tofu to cover it. Set aside for 3 minutes, or until heated through, then drain well, taking care that the tofu doesn’t break up. Place the tofu on a serving platter and scatter the coriander over the top. Drizzle the sesame dressing over the tofu, then drizzle with a little chilli oil, to taste. Sprinkle with the sesame seeds and serve.
