Chocolate curls are a cheap and easy decoration for chocolate-based cakes. I like to place them among a pile of berries on top of a cake or pile them up for some central height. The curls will keep for a week or two, so this is a great decoration to make ahead.

Method

  1. Start with a room temperature bar of dark or white chocolate flipped over with the squares facing downwards. Place some baking parchment on top of the chocolate and warm the surface up with the palm of your hand.
  2. Use a sharp cookie cutter and drag it at an angle towards you. The curls should form inside the cutter. Vary the angle of the cutter until you find which one works best (the temperature and type of chocolate can affect how well your curls work).
  3. Tip into a sealed container and transfer to the fridge to harden up before use. Avoid picking up the chocolate curls with your fingers as they can melt very easily.
